  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 3 large eggs
  • Spices: cinnamon, ginger, nutmeg
  • 55 g unsalted butter (melted) for streusel
  • 50 g all-purpose flour for streusel
  • 50 g brown sugar for streusel
  • 20 g rolled oats for streusel
  • 50 g brown sugar for apples
  • 2 teaspoons cornstarch for apples

Instructions

  1. Preheat your oven and prepare the crust by mixing crushed biscoff cookies with melted butter. Press into a springform pan.
  2. Toss sliced apples with brown sugar, cinnamon, and cornstarch. Cook slightly to soften.
  3. Beat cream cheese and sugar until smooth; add Greek yogurt, eggs one at a time, and spices.
  4. Layer half of the cheesecake batter over the crust, then add spiced apples before pouring the remaining batter.
  5. Sprinkle streusel topping on top and bake until set but slightly jiggly.
  6. Let cool completely before chilling in the refrigerator for at least four hours.
