  • 50 grams dark brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • Pinch of salt
  • Lemon juice from one small lemon
  • 184 grams unsalted butter
  • 100 grams dark brown sugar
  • 100 grams granulated sugar
  • 2 teaspoons vanilla bean paste or extract
  • 1 egg (room temperature)
  • 1 egg yolk (room temperature)
  • 250 grams all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 5 grams cornstarch
  • 66 grams granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Prepare the caramelized apples by peeling and finely dicing the gala apples. Combine them with dark brown sugar, ground cinnamon, salt, and lemon juice in a skillet over low-medium heat. Cook for about 10 minutes until tender and caramelized. Chill in the fridge.
  2. Brown the unsalted butter in a saucepan over medium heat until golden and nutty; cool slightly.
  3. In another bowl, mix flour, baking soda, cream of tartar, ground cinnamon, fine sea salt, and cornstarch.
  4. Whisk together cooled brown butter with sugars and vanilla until smooth; add egg and egg yolk.
  5. Gently fold in the dry ingredients until just combined; then fold in chilled caramelized apples. Cover dough and chill for 2-3 hours.
  6. Preheat oven to 350°F (175°C). Roll dough into balls, coat in cinnamon sugar, and place on lined baking sheets.
  7. Bake for 12-14 minutes until edges are golden but centers remain puffy; cool before enjoying.
