  • 23 fresh jalapeños, diced
  • 1 can (15 oz) white beans (cannellini or great northern)
  • 4 cups low-sodium vegetable broth
  • 1 cup unsweetened coconut milk
  • 2 tablespoons cornstarch mixed with 2 tablespoons water
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, sauté the diced onion in a splash of oil until translucent.
