  • ½ cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tbsp cornstarch
  • 1 tbsp garlic, minced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes (optional)
  • ½ cup sun-dried tomatoes, chopped
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Season the chicken with salt and pepper.
  2. In a bowl, whisk together chicken broth and cornstarch until smooth. Add heavy cream, Parmesan cheese, minced garlic, oregano, thyme, and red pepper flakes.
  3. Place seasoned chicken in the crockpot and pour the sauce mixture over it.
  4. Sprinkle chopped sun-dried tomatoes on top.
  5. Cook on low for about 4 hours or high for 2 hours until tender.
  6. In the last half hour, add butter to enrich the sauce.
  7. Serve garnished with fresh herbs over rice or pasta.
