  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 1 1/4 cups water (for frosting)
  • 1 1/2 cups unsalted butter, room temperature
  • Zest from 3 blood oranges (for frosting)
  • 6 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup blood orange juice (for frosting)
  • 1/2 cup dark chocolate (for ganache)
  • 1/2 cup half-and-half (or 1/4 cup cream with 1/4 cup milk)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a large bowl, whisk together water, sugar, olive oil, and blood orange juice until well combined.
  3. In another bowl, sift together flour, cocoa powder, salt, and baking soda. Gradually fold into the wet mixture until just combined.
  4. Divide the batter between prepared pans and bake for about 25 minutes or until a toothpick comes out clean.
  5. Once baked, cool the cakes in the pans for 10 minutes before transferring to wire racks to cool completely.
  6. For the frosting, beat room temperature butter until creamy, then gradually add powdered sugar along with blood orange juice and zest.
  7. Assemble by placing one cake layer on a platter, spreading frosting on top, adding the second layer, and frosting the sides and top.
  8. For ganache, heat half-and-half until warm; pour over chopped dark chocolate and stir until smooth. Drizzle over frosted cake.
