  • 1 1/4 cups crushed vanilla wafers
  • 3 tablespoons melted unsalted butter
  • 16 ounces full-fat cream cheese, softened
  • 1/3 cup white sugar
  • 2 large eggs, at room temperature
  • 1 tablespoon pure vanilla extract
  • 1/2 cup sour cream
  • 1 cup heavy cream
  • 1/2 cup confectioners’ sugar
  • Colorful sprinkles for topping

Instructions

  1. Preheat your oven to 325°F (163°C). In a bowl, mix crushed vanilla wafers with melted butter and press into the bottom of lined muffin tins.
  2. Beat softened cream cheese until smooth. Gradually add sugar and then eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until combined.
  3. Pour the filling over the crusts in each muffin tin and bake for about 15 minutes until set but still slightly jiggly in the middle.
  4. Cool at room temperature for an hour, then refrigerate for at least two hours before serving.
  5. For the whipped topping, whip heavy cream with confectioners’ sugar until stiff peaks form and dollop on top of each cheesecake before adding sprinkles.
