  • 1 cup raw quinoa
  • 2 cups water
  • 1 can (15 ounces) chickpeas
  • 1 medium cucumber
  • 1 medium red bell pepper
  • 3/4 cup chopped red onion
  • 1 cup chopped flat-leaf parsley
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tablespoon apple cider vinegar
  • 2 garlic cloves

Instructions

  1. Rinse quinoa under cold water and combine with water in a pot. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until water is absorbed. Fluff with a fork.
  2. While quinoa cooks, dice cucumber and red bell pepper, chop red onion and parsley.
  3. In a bowl, whisk together olive oil, lemon juice, apple cider vinegar, minced garlic, salt, and pepper.
  4. In a large bowl, mix cooked quinoa with chickpeas and chopped veggies. Pour dressing over and toss gently.
  5. Chill in the refrigerator for at least 30 minutes before serving.
