  • 5 cups cubed sweet potatoes

  • 1 pound turkey sausage
  • 10 eggs
  • 1/2 cup plant-based milk
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup grated mozzarella cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat avocado oil in a large skillet over medium heat. Add onion and bell pepper; sauté until softened.
  3. Add turkey sausage, breaking it apart as it cooks through.
