  • 1 tablespoon soy sauce
  • 1 beaten egg
  • 1/4 cup cilantro (chopped)
  • 1 tablespoon lime juice
  • 1/4 cup peanut butter (for dipping sauce)
  • 1 tablespoon soy sauce (for dipping sauce)
  • 1 tablespoon lime juice (for dipping sauce)
  • 1 tablespoon honey (for dipping sauce)
  • 1 teaspoon red curry paste (for dipping sauce)
  • 23 tablespoons warm water (to thin dipping sauce)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together ground chicken, panko breadcrumbs, red curry paste, minced garlic, grated ginger, fish sauce, soy sauce, beaten egg, cilantro, and lime juice until well combined.
  3. Shape the mixture into small balls (about 1 inch) and place them on a parchment-lined baking sheet.
  4. Bake for approximately 20 minutes until cooked through and golden brown.
  5. Prepare the dipping sauce by whisking together peanut butter, soy sauce, lime juice, honey, red curry paste, and warm water until smooth.
