  • 3 heads of garlic
  • 12 teaspoons extra virgin olive oil
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • ¾ cup whole milk
  • ½ cup parmesan cheese, freshly grated
  • 1 ball pizza dough (16oz)
  • Semolina (for sprinkling on pizza peel)
  • 8oz provolone cheese, freshly grated
  • 4oz fresh mozzarella cheese, sliced
  • Thyme leaves
  • Fresh basil leaves
  • Hot honey
  • Balsamic glaze
  • Red pepper flakes

Instructions

  1. Preheat oven to 400°F (200°C). Roast the garlic heads drizzled with olive oil, salt, and pepper in foil for about 50-60 minutes until golden brown.
  2. Once cooled, squeeze two heads into a paste and reserve the third head for topping.
  3. In a saucepan, melt butter and whisk in flour; gradually add milk while stirring until thickened. Mix in parmesan cheese and roasted garlic paste.
  4. Increase oven temperature to 450°F (232°C) and preheat a pizza stone.
  5. Roll out the pizza dough on a floured surface and place it on a semolina-dusted pizza peel.
  6. Spread the garlic sauce over the dough, top with provolone, mozzarella, and reserved roasted garlic cloves.
  7. Bake on the preheated stone for 14-15 minutes until crust is golden brown.
  8. Garnish with thyme leaves and basil before serving.
