  • ½ cup beef broth (or vegetable broth)
  • 4 large Yukon Gold potatoes, sliced ¼-inch thick
  • 1 tablespoon butter (for greasing)
  • 1 cup shredded Gruyère cheese (or Swiss, cheddar, or mozzarella)
  • ½ cup grated Parmesan cheese
  • 1 cup heavy cream or whole milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • Fresh thyme sprigs (for garnish)
  • Extra Parmesan cheese (for topping)
  • Crispy fried onions (optional, for extra crunch)

Instructions

  1. In a skillet, melt butter and olive oil over medium heat. Add sliced onions, salt, pepper, and optional sugar; cook until caramelized.
  2. Grease a baking dish with butter. Layer half of the sliced potatoes, followed by half of the caramelized onions and half of both cheeses. Repeat the layers.
  3. In a bowl, whisk together cream (or milk), salt, pepper, and thyme; pour evenly over layers.
  4. Cover with foil and bake at 375°F (190°C) for about 45 minutes. Remove foil, add extra Parmesan if desired, and bake uncovered for an additional 15-20 minutes until golden brown.
