  • 1 large bulb of garlic
  • 1.3kg / 2.8lb baking potatoes
  • 5 tbsp / 75g butter (2 tbsp melted)
  • 2 tbsp heavy cream
  • 60g / 3/4 cup freshly grated parmesan
  • 4 large egg yolks
  • Fresh parsley (for garnish)
  • Olive oil (as needed)
  • Salt & pepper (to taste)

Instructions

  1. Roast the garlic: Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast at 180°C/356°F for about 50-60 minutes until soft.
  2. Prepare the potatoes: Peel and dice the baking potatoes. Boil in salted water until fork-tender (15-20 minutes). Drain well.
  3. Mash: Return drained potatoes to pot, add melted butter, heavy cream, roasted garlic, and parmesan cheese. Season with salt and pepper. Let cool slightly before mixing in egg yolks.
  4. Pipe: Fill a piping bag with the potato mixture and pipe swirls onto a parchment-lined tray.
  5. Bake: Drizzle melted butter over each swirl and bake at 200°C/400°F for 15-20 minutes or until golden brown.
