  • Juice from 1/2 large lemon
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 1/2 tsp dried oregano
  • 1 tsp sweet paprika
  • 1 tsp honey or maple syrup
  • 1/2 tsp kosher salt
  • 1 tbsp olive oil
  • 2 garlic cloves, thinly sliced
  • 1 cup long-grain white rice
  • 1 3/4 cup low-sodium chicken stock or water
  • 1 tbsp lemon zest
  • Kosher salt and freshly ground black pepper, to taste
  • Juice from 1/2 large lemon
  • Plain yogurt + a pinch of salt
  • Fresh dill
  • Marinated olives (optional)

Instructions

  1. Soak wooden skewers in water for 15 minutes.
  2. In a large bowl, mix chicken with olive oil, lemon juice, minced garlic, oregano, paprika, honey (or maple syrup), and salt. Let marinate for 15-20 minutes.
  3. In a medium pot, heat olive oil over medium-low heat; add sliced garlic and rice. Toast for 3-4 minutes.
  4. Add chicken stock, lemon zest, and salt; bring to a boil. Cover and reduce heat to low; cook undisturbed for 15 minutes.
  5. Preheat broiler; line a baking sheet with parchment paper. Thread marinated chicken onto skewers and broil for 12-15 minutes until cooked through.
  6. Fluff the rice with a fork after resting for 10 minutes; stir in fresh lemon juice before serving.
