  • 34 medium potatoes
  • 1 large carrot
  • 1 small onion
  • 10 sorrel leaves or chopped spinach
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon ghee butter or olive oil
  • 4 cups filtered water
  • 2 teaspoons vegetable bouillon base
  • Optional: sour cream and hard-boiled egg for serving

Instructions

  1. Cube the potatoes and carrots, and dice the onion. Chop the sorrel (or spinach) and dill.
  2. In a large pot over medium heat, sauté the onion in ghee until translucent (about 3 minutes). Add carrots and sauté for another 3 minutes.
  3. Pour in the water, add cubed potatoes and vegetable bouillon, then bring to a boil. Cover and simmer for about 20 minutes until vegetables are tender.
  4. Stir in the chopped sorrel (or spinach) and dill; cover and let rest for at least 10 minutes before serving.
  5. Serve hot or chilled, topped with sour cream and hard-boiled eggs if desired.
