  • ½ cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons red food coloring
  • ½ cup dark chocolate chips
  • ¼ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In one bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix sugar and vegetable oil; then add eggs, buttermilk, and vanilla until smooth.
  4. Fold the dry ingredients into the wet mixture along with red food coloring until just combined.
  5. For the ganache, heat heavy cream until boiling; pour over chocolate chips and stir until smooth.
  6. Fill each cupcake liner halfway with batter, add a spoonful of ganache in the center, then top with more batter until three-quarters full.
  7. Bake for 15–18 minutes until edges are firm but centers jiggle slightly.
  8. Allow to cool for about 5 minutes before serving.
