  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup cold unsalted butter, cubed

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan.
  2. For the filling, beat cream cheese until smooth. Add granulated sugar and vanilla, then incorporate eggs one at a time followed by sour cream.
  3. In another bowl, mix diced apples with brown sugar, cinnamon, cornstarch, water, and lemon juice.
  4. Pour cheesecake filling over the crust and layer with the apple mixture.
  5. For the crumble topping, combine flour, brown sugar, and cinnamon; cut in cold butter until crumbly. Sprinkle over apples.
