  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt
  • 8 oz unsalted butter (very cold, diced)
  • 69 tablespoons ice water
  • 2 large honey crisp apples (peeled and diced)
  • 3 tablespoons salted butter (for filling)
  • 18 oz fresh blackberries
  • 2/3 cup brown sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the crust by mixing flour, sugar, and salt in a bowl. Add cold butter and mix until crumbly. Gradually add ice water until it holds together. Chill for at least an hour.
  2. For the apple filling, sauté diced apples in butter until golden. Add brown sugar, vanilla, and cook until syrupy. Cool.
  3. Roast blackberries with sugar and vanilla until thickened.
  4. Roll out chilled dough, cut into pumpkin shapes, fill with apple or blackberry filling, seal edges, and brush with egg wash.
  5. Bake at 375°F for about 25 minutes until golden brown.
