  • 2 tbsp lemon zest (from 23 large lemons)
  • 270 g almond flour
  • 3 large egg whites (room temperature)
  • 1/4 tsp fine sea salt
  • 1 1/2 tsp pure almond extract
  • 50 g granulated sugar (for rolling)
  • 30 g powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, massage lemon zest into granulated sugar until fragrant.
  3. Sift almond flour into a large bowl and mix in the lemon-infused sugar.
  4. In another bowl, whip egg whites and salt on high until stiff peaks form.
  5. Gently fold in almond extract and one-third of the flour mixture until combined.
  6. Gradually incorporate the remaining flour mixture until smooth.
  7. Prepare bowls with granulated sugar and powdered sugar for rolling the cookies.
  8. Scoop dough into balls using a cookie scoop, then roll each ball in both sugars.
  9. Place on the prepared baking sheet, pressing down slightly to form cracks.
  10. Bake for 22-25 minutes until golden brown on the bottoms.
  11. Cool on wire racks before serving.
