- 1.5 lbs white fish fillets (cod, halibut, or tilapia)
- 2 tablespoons olive oil
- 1 medium red onion, sliced
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup cherry tomatoes, halved
- 1/3 cup pitted Kalamata olives, halved
- Juice and zest of 1 lemon
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
- Preheat oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
- In a bowl, combine onions, bell peppers, tomatoes, garlic, olives, olive oil, oregano, salt, and pepper. Toss well.
- Spread the vegetable mixture in the baking dish and place fish fillets on top. Drizzle with lemon juice and zest.
- Bake uncovered for 20–25 minutes until fish is opaque and flakes easily with a fork.
- Garnish with fresh parsley and serve with lemon wedges.
