  • 4 cups fresh corn kernels (about 56 ears or 2 cans of corn)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/2 cup fresh cilantro, chopped
  • 1 cup crumbled queso fresco or feta cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream (or Greek yogurt)
  • Juice of 2 limes
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. If using fresh corn, boil in salted water for 5-7 minutes until tender; if using canned corn, drain.
  2. While cooling, chop the red bell pepper, onion, jalapeño (if using), and cilantro.
  3. In a large bowl, whisk together mayonnaise, sour cream (or yogurt), lime juice, chili powder, garlic powder, salt, and black pepper until smooth.
  4. Once cooled slightly, combine corn with dressing and chopped veggies; gently fold in crumbled cheese.
  5. Chill in the fridge for at least 10-15 minutes before serving.
