  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup canned pumpkin puree
  • 1 ½ cups brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ½ cup all-purpose flour
  • ¼ cup rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined. Press into the bottom of the pan.
  3. In a separate bowl, beat cream cheese until smooth. Add pumpkin puree, brown sugar, eggs, vanilla extract, and pumpkin pie spice; blend until smooth. Pour over crust.
  4. For the streusel topping, combine flour, rolled oats, cold cubed butter, and brown sugar until crumbly; sprinkle over cheesecake layer.
  5. Bake for about 45 minutes until set. Allow cooling at room temperature before chilling in the refrigerator for at least two hours.
