  • 350g pumpkin, peeled and diced
  • 500g gnocchi
  • 50g blue cheese or soft goat's cheese
  • 6g sage leaves
  • 400ml vegetable stock
  • ¼ cup single dairy cream
  • 50g mozzarella or cheddar cheese
  • 30g pecans

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Boil diced pumpkin in water until tender, about 10-15 minutes.
  3. Cook gnocchi in salted water until they float; drain well.
  4. In a large bowl, mix cooked pumpkin, gnocchi, vegetable stock, dairy cream, blue cheese (or goat's cheese), and half of the mozzarella/cheddar.
  5. Transfer to an ovenproof dish; top with remaining cheese and chopped pecans.
  6. Bake for 20-25 minutes until bubbly and golden brown.
  7. Let cool slightly before serving; garnish with fresh sage leaves.
