  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into a greased baking pan and bake for about 10 minutes until lightly golden.
  2. In another bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in pumpkin puree, vanilla extract, pumpkin pie spice.
  3. Pour filling over the baked crust and spread evenly. Bake for 30-40 minutes until set but slightly jiggly in the center.
  4. Allow to cool at room temperature before chilling in the refrigerator for at least 2 hours.
  5. Cut into squares and serve topped with whipped cream, caramel sauce, and chopped pecans.
