  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup (250 ml) heavy cream
  • 1/4 cup (60 ml) whole milk
  • 1 tablespoon unsalted butter
  • 1 tsp fresh thyme leaves
  • 1/4 tsp nutmeg
  • 1/2 cup (40g) grated parmesan cheese
  • 2 cups (about 220g) shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for about 30 minutes until soft.
  2. Grease a 9×13-inch baking dish.
  3. Peel and thinly slice the potatoes using a mandoline slicer for even thickness.
  4. Layer potato slices upright in the greased baking dish.
  5. In a saucepan over medium heat, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper. Stir until blended without boiling.
  6. Squeeze roasted garlic cloves into a paste and mix into the cream mixture.
  7. Pour the cream mixture evenly over the layered potatoes, cover with foil, and bake for 40 minutes.
  8. Remove foil, sprinkle remaining cheeses on top, and bake uncovered for another 30 minutes until bubbly and golden brown.
  9. Let cool for a few minutes before serving; garnish with fresh chives.
