  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs

  • 1/2 cup sour cream
  • 3 medium apples, peeled and diced
  • 2 tablespoons unsalted butter (for cooking apples)
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup granulated sugar (for caramel sauce)
  • 6 tablespoons unsalted butter, cubed (for caramel sauce)
  • 1/2 cup heavy cream (for caramel sauce)
  • 1 teaspoon sea salt (for caramel sauce)

Instructions

  1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, sugar, and melted butter; press into the bottom of the pan to form the crust.
  3. Bake crust for about 10 minutes until set and golden; cool slightly.
  4. Beat cream cheese until smooth; add sugar and mix well. Add eggs one at a time, mixing on low speed.
  5. Stir in vanilla extract and sour cream; pour over the cooled crust.
  6. Prepare a water bath by placing the springform pan in a larger roasting pan filled with hot water halfway up the sides.
  7. Bake for about 55-65 minutes until slightly jiggly in the center; cool in the oven with the door cracked for an hour before refrigerating for at least four hours or overnight.
  8. Sauté diced apples with butter, brown sugar, cinnamon, and nutmeg until soft.
  9. Prepare caramel sauce by melting sugar until amber; add butter and cream while whisking gently; stir in sea salt.
