  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 cups peeled and sliced apples
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp all-purpose flour
  • 1 cup granulated sugar (for caramel)
  • 6 tbsp unsalted butter (for caramel)
  • 1/2 cup heavy cream (for caramel)
  • 1 tsp sea salt

Instructions

  1. Preheat your oven to 325°F (163°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan and bake for 10 minutes. Allow to cool.
  2. In a separate bowl, mix sliced apples with brown sugar, cinnamon, and flour until coated. Spread evenly over the cooled crust.
  3. Beat softened cream cheese with granulated sugar until smooth. Add eggs one at a time, followed by vanilla extract and sour cream. Mix until well combined.
  4. Pour cheesecake mixture over the apple layer in the pan. Bake for about 60–70 minutes until nearly set in the center.
  5. Cool completely at room temperature before refrigerating for at least four hours or overnight.
  6. For the salted caramel sauce: Melt sugar in a saucepan over medium heat until golden brown; stir in butter until smooth. Gradually add heavy cream while stirring vigorously; sprinkle in sea salt.
  7. Drizzle salted caramel over chilled cheesecake before serving.
