  • 1/4 cup salted butter, cubed
  • 2 tbsp apple cider
  • 1/2 cup brown sugar
  • 1 and 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar for caramel
  • 6 tbsp salted butter for caramel
  • 1/2 cup + 1 tbsp heavy cream
  • Pinch of flaky sea salt
  • 1/2 cup granulated sugar for crumble
  • 2 and 3/4 tsp cinnamon for crumble
  • 1/4 tsp nutmeg for crumble
  • 1/8 tsp allspice for crumble
  • 1/8 tsp ground cloves for crumble
  • 1/4 cup salted butter, melted for crumble
  • 1/4 cup light brown sugar for crumble
  • 1 and 1/2 tbsp granulated sugar for crumble
  • 1/2 cup + 1 tbsp all-purpose flour for crumble
  • 3/4 tsp cinnamon for crumble
  • Pinch of salt for crumble

Instructions

  1. Cream softened butter with sugars until fluffy. Mix in eggs and vanilla extract.
  2. Combine dry ingredients and mix into the butter mixture to form dough. Chill for 30 minutes.
  3. Prepare apple filling by cooking diced apples with brown sugar and spices until tender.
  4. Make salted caramel sauce by melting sugar and butter, then stirring in cream.
  5. Scoop chilled dough into balls and chill again for at least 4 hours.
  6. Prepare crumble topping by mixing melted butter with dry ingredients and bake until golden.
  7. Preheat oven to 365°F (185°C) and bake cookies for 10-12 minutes, then make an indent to fill with apple filling, crumble topping, and caramel.
