  • 1 ½ pounds lean ground beef
  • 1 ¾ cups ketchup
  • 3 tablespoons avocado oil
  • 1 tablespoon all-purpose season salt
  • 1 teaspoon dried parsley
  • ½ teaspoon freshly ground black pepper
  • ¼ cup water
  • 2 tablespoons sugar
  • 1 tablespoon prepared mustard
  • ½ teaspoon white vinegar
  • ½ teaspoon paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • sliced dill pickles
  • pickled red onions
  • sliced raw jalapeños
  • snipped chives or sliced green onions

Instructions

  1. Preheat oven to 400°F (200°C). Dice sweet potatoes and toss them with avocado oil, season salt, parsley, and pepper on a baking sheet.
  2. Roast for 25-30 minutes until fork-tender and slightly caramelized.
  3. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  4. Stir in ketchup, water, sugar, mustard, vinegar, paprika, salt, and pepper into the skillet. Simmer for about 10 minutes.
  5. Serve roasted sweet potatoes topped with sloppy joe sauce and desired toppings.
