  • 2 tbsp chipotle peppers in adobo sauce
  • 2 small red and yellow bell peppers (thinly sliced)
  • 1 cup asparagus (cut into 1-inch pieces)
  • 1/4 cup organic frozen peas
  • 1 small sweet onion (finely diced)
  • 3 fresh garlic cloves (minced)
  • 2 tbsp honey
  • 2 tbsp avocado oil
  • 1 tbsp grass-fed butter
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • Salt and freshly cracked pepper (to taste)
  • 1/4 cup shaved Parmigiano for garnish
  • 1/4 cup chopped fresh parsley or cilantro for garnish

Instructions

  1. Marinate chicken breasts with honey, avocado oil, salt, and pepper.
  2. Cook the penne pasta according to package instructions; reserve some pasta water.
  3. In a skillet, heat avocado oil and butter; sauté onions until translucent.
  4. Add minced garlic and sliced bell peppers; cook until fragrant.
  5. Push veggies aside and cook marinated chicken breasts until golden brown and cooked through.
  6. Lower heat; stir in heavy cream and parmesan cheese. Add chipotle peppers and spices.
  7. Combine cooked pasta with the sauce; adjust consistency with reserved pasta water if needed.
