1½ lbs mini potatoes
4 cups water
3 tbsp lemon juice
2 tbsp olive oil
1 tsp each: salt, onion powder, garlic powder, paprika
½ tsp black pepper
Parsley flakes (for garnish)
Preheat oven to 385°F and line a baking sheet.
Soak washed, carved potatoes in lemon water.
Mix oil, remaining lemon juice, and seasonings.
Toss potatoes in seasoned oil.
Bake face-up for 30 mins until golden and tender.
