  • 1/2 cup creamy cashew butter
  • 1/4 cup pure maple syrup
  • 1/4 cup Medjool dates, pitted (about 3-4)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup freeze-dried strawberries, crushed
  • 1/4 cup white chocolate chips
  • 1 tsp coconut oil

Instructions

  1. In a food processor, combine rolled oats and raw cashews. Pulse until they form a fine flour-like consistency.
  2. Add pitted Medjool dates and pulse until finely chopped and evenly blended.
  3. Incorporate cashew butter, maple syrup, vanilla extract, and salt into the mixture; blend on low until a sticky dough forms.
  4. Transfer dough to a mixing bowl and fold in crushed freeze-dried strawberries until evenly mixed.
  5. Using a cookie scoop or wet hands, shape the dough into small balls and place them on a parchment-lined tray.
  6. Freeze for about 20-30 minutes to firm them up.
  7. Melt white chocolate chips with coconut oil in the microwave in 30-second increments until smooth.
  8. Drizzle melted chocolate over each bite and garnish with additional crushed freeze-dried strawberries.
  9. Allow to set in the fridge before storing in an airtight container.
