  • 2 medium butternut squash
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • Black pepper (freshly ground)
  • 1 tablespoon olive oil
  • 6 oz fresh spinach
  • 8 oz cream cheese
  • 1 cup shredded Parmesan cheese
  • 3 tablespoons fresh thyme

Instructions

  1. Preheat oven to 400°F (200°C). Halve the butternut squashes lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper.
  2. Place cut side down on a parchment-lined baking sheet and roast for 40-45 minutes until tender.
  3. In a skillet, heat olive oil over medium heat and sauté spinach until wilted. Combine with cream cheese, Parmesan, and thyme.
  4. Flip roasted squash cut side up, fill each half with the spinach mixture, and bake for an additional 15-20 minutes until heated through.
  5. Serve warm, garnished with extra thyme.
