  • 10 mini pumpkins
  • 1 lb ground beef
  • 1 can (15 oz) pumpkin puree
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 6 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp pumpkin pie spice
  • 1/2 tbsp fresh thyme
  • 1/2 tbsp fresh oregano
  • 1/2 tbsp fresh sage, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse mini pumpkins under cool water; cut off tops and scoop out seeds.
  3. In a pan over medium heat, sauté diced onion and minced garlic in olive oil until fragrant.
  4. Mix sautéed onion and garlic with ground beef, pumpkin puree, spices, salt, and herbs in a bowl.
  5. Grease a baking dish; place pumpkins upright and fill with stuffing.
  6. Roast for 30–35 minutes until tender.
  7. Serve hot as an impressive centerpiece.
