  • 2 large sweet potatoes, cubed
  • 1/2 medium red onion, sliced
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 3 oz mixed greens
  • 1/4 cup chopped parsley
  • 1/4 cup chopped cilantro
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 2 tbsp garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/4 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • Salt and pepper, to taste
  • Dried cranberries for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). On a baking sheet, spread out cubed sweet potatoes and chickpeas.
  2. In a bowl, whisk together olive oil, lemon juice, garlic, cumin, paprika, cinnamon, cayenne pepper, salt, and pepper. Pour half over the veggies.
  3. Add sliced onion to the baking sheet. Bake for about 30 minutes until tender; stir halfway through.
  4. Once cooled slightly, mix roasted veggies with mixed greens in a large bowl. Add chopped parsley and cilantro along with any remaining dressing.
  5. Garnish with dried cranberries if desired and serve immediately.
