  • 2 cloves of garlic
  • 1 tablespoon fresh minced ginger
  • 10 oz ground chicken
  • ¼ cup Tamari (or soy sauce, coconut aminos)
  • 2 Tablespoon Thai sweet red chili sauce
  • juice of 1 lime
  • 1 teaspoon maple syrup
  • ⅓ cup cashews (chopped)
  • ¼ cup scallions (chopped)
  • ¼ cup cilantro (chopped)
  • ¼½ cup carrots (shredded)
  • Sesame seeds for topping
  • 1 head butter lettuce

Instructions

  1. Heat sesame oil in a pan over medium-high heat. Add diced onion; cook until translucent (2-3 minutes).
  2. Stir in minced garlic and ginger; sauté until fragrant.
  3. Add ground chicken, breaking it apart as it cooks until golden brown (3-4 minutes). Season lightly with salt and pepper.
  4. In a bowl, mix Tamari, Thai sweet chili sauce, lime juice, and maple syrup. Pour this sauce over the cooked chicken; stir in chopped cashews, shredded carrots, scallions, and cilantro.
  5. Serve by scooping the mixture into butter lettuce leaves and garnishing with sesame seeds.
