  • 190g graham crackers (12 full sheets)
  • 3 tbsp granulated sugar
  • 5 tbsp melted unsalted butter
  • 32 oz full-fat cream cheese (4 blocks)
  • 1 ½ cups granulated sugar
  • ½ tsp salt
  • 1 tsp vanilla bean paste or extract
  • 4 large eggs
  • ½ cup heavy cream
  • 1 cup sour cream
  • 23 tbsp freshly squeezed lemon juice

Instructions

  1. Preheat oven to 325°F (163°C). Crush graham crackers into fine crumbs and mix with sugar and melted butter. Press firmly into a springform pan base.
  2. In a bowl, beat cream cheese with sugar until smooth. Add salt, vanilla, eggs one at a time, followed by heavy cream, sour cream, and lemon juice. Mix until combined but do not overmix.
  3. Pour filling over crust and bake for about 1 hour and 15 minutes until edges are set but center has a slight jiggle.
