  • 16 oz mushrooms (white button or cremini)
  • 1.5 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1 cup soda water (or beef broth)
  • 1/2 cup buttermilk
  • 1 egg
  • 1/2 Tbsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp sweet paprika
  • 1/2 tsp black pepper
  • Vegetable oil for frying
  • Handful of parsley

Instructions

  1. Clean the mushrooms and trim any woody ends. For larger mushrooms, cut them in halves or quarters.
  2. In a bowl, combine flour with seasoning. Toss mushrooms in about ¼ of this mixture.
  3. In another bowl, whisk together soda water (or broth), buttermilk, and egg. Gradually add the remaining flour mixture until smooth.
  4. Set up your breading station with panko breadcrumbs ready.
  5. Heat oil in a large pan to 350°F (175°C). Dredge each mushroom in batter then coat with breadcrumbs.
  6. Fry mushrooms in batches for 3-5 minutes until golden brown and crisp.
  7. Drain on paper towels and serve hot.
